New proq frontier - bitten off more than I can chew?

Hi folks,

I'm totally new to smoking and yesterday the Frontier arrived, I did a dry run and only managed to get it up to 200. I think this may have been due to the Calor briquettes I used.

So, I've invited friends over for a bbq on Sunday and now panicking that I may end up with undercooked food.

They are all arriving from 3pm onwards.
Would it be a little over ambitious to attempt tge following :

Chicken wings and/or a whole chicken
A joint of either pork or beef
Pork or beef ribs.

I intend to prep everything on Saturday and have it in the smoker early on Sunday.

I'd appreciate some advice on what time to start at and if cooking all the above would be okay?

Hi what meat did you decide to go for. I have the pro q excel and find that the temp gauge is not very accurate.
I bought a maverick et-733 which is a dual probe. It has two probes which can measure the temperature of the meat and the temperature of the smoker.
Check these out on amazon. I also have a hand held meat thermometer called a thermapen which checks the meat temperature very quickly.
If you are on Facebook there are groups that you can join and they will give you advice.
They are I Love Barbeque smoking Uk There is also another group called Smoking Meat Low And Slow. People on that site are mostly American, they have over 82.000 members so lots of advice on there for you.

I've gone for chicken legs, thighs and a 1.6kg pork shoulder.

For pulled pork its 1.5 hours per pound so it should take around 5-6 hours. You need to let the meat rest for at least 30min. When resting make sure its wrapped in foil. When I do pulled pork I wait for the meat to get to 160f, then wrap in foil which helps to push the temperature up. If then the food is cooked a few hours before people arrive I leave the meat in the foil, wrap in a towels and put in a cool box. It will then stay hot for 2-3 hours.

The chicken will be about 2hours at 220.
Use the minion method when doing longer cooks. You can see videos of this on you tube.
Chicken is better at BBQ temperature so if your pork is done earlier you can take the water pan out so the chicken cooks quicker.

They say when smoking low n slow that its done when its done so give a rough time when your guests care going to eat.
Say and hour or so after they arrive, will give them more time to drink beer.
