If I was to start cooking a pork shoulder around 4-5 would it then be ok to back to sleep for around 3-4 hours.
Will the temperature stay at around 200-250f
Also can you confirm that the water bowl should not run dry in 3-4 hours

Hi Adrian

Yes it should be fine to go back to sleep for 3 to 4 hours as long as have enough charcoal in the basket
restaurant grade would be best. And as long as the water pan is full everything should be ok.
You can always close the bottom 3 vents a little to reduce air flow which will help
with the charcoal burning at a slower rate but don't close them completely But leave the top vent open.
