new Excel 20 owner

Hi from Essex

I have just took delivery of the excel 20 and looking forward to cooking some great food.
I have been enjoying other peoples smoked food for some time and always wanted to try it myself.

I have been to the Pitt Cue restaurant and have the book. I love their food and approach to cooking.

After being inspired by a work colleague who I, by accident, found out has been using a Big Ugly Drum Smoke for a year ( you think you know the people you work with hey?) I set out to build my own.

Through a lot of trial and error I have now at least got the hang of the physics and principles but found a few drawbacks with my rudimentary design so after looking around I decided on the ProQ.

I have a love of food and a thirst for knowledge so looking forward to producing top quality food with some help from you ladies and gents.
