Chicken thighs? Empty Chicken thighs?

Hi,

Does anyone know if you can cold smoke chicken thighs? I've been googling and all I can find online is people warning of botulism Neutral but can't find anyone saying it's ok. Your thoughts?

It shouldn't be a problem, as long as the thighs are very fresh and they are kept at low temperatures throughout. They will need to be cooked before they can be eaten.

Great thanks, that's a relief. I've got some in the fridge air drying after a short brining. I'll then take them outside to the smoker where it's currently 7 degrees for a couple of hours' smoking and then put them straight in the oven and roast until well cooked. I never realised cold smoking would be so perilous!

Is there a list somewhere of foods that are safe to be cold smoked?

Most foods can be cold smoked, some just needs to be cooked before you can eat it, like Bacon. Others like salmon, cheese, salami don't need cooking.

Thanks Mack,

The chicken was lovely and I'm still alive to talk about it lol. I smoked it for 3 hours and roasted it in the oven for an hour with a honey, mustard and smoked butter glaze. Very tasty indeed.
