Is it okay to smoke these spareribs?
I smoked ribs for my first time last weekend, and going to do it again today. I went to a meat shop yesterday, and it didn't really register in my mind (I was pretty tired) that they were already cut like this when I was seasoning them last night. I got the desired smoke ring last time, I just want to make sure I am getting it again this time. I have a feeling I won't get the smoke ring, and it won't be moist and tender. What is your take on it?

You should still get a smoke ring. I would worry more about them drying out. Also, with them cut, it could take a lot less time to cook them. I would lay them flat, cut side up, to minimize them pulling apart at the cuts. Maybe even prop up both ends a bit to keep them together. Then I would make sure to mop them every 30 minutes. I use a spray bottle with 1/2 apple juice and 1/2 beer. With those cuts, I think I would also wrap them after 2-3 hours.
