First smoke on the ProQ
Well trying my first smoke on the ProQ Excel today, after waiting for the time to do this all week. So what to cook was the first decision, I went for a couple of whole chickens, thought it would make good sandwiches for the rest of the week as well as feed me tonight So decided I would do one with a rub and one just plain, amazingly for me I decided to keep the first smoke relatively simple. Anyway here is the chicken after being prepared: -

The ProQ has been happily sitting at about 226F for most of the cook although still got at least an hour left before they are going to be done. However have the food thermometer at the ready when it gets closer to the time. In the meantime I am perfecting the art of looking busy while doing nothing Will post more pictures later when the birds are cooked . . although I imagine I will probably eat some of them before you get to see the pictures.

Sorry got a bit carried away, took a bit longer than expected and the meat had been carved and eaten by the time I realised I hadn't taken any more pictures. Anyway it was a successful first smoking session and will be many more to follow, I will try and remember the pictures in future.
