First fatty!

The first of hopefully many fatties got smoked this weekend!

I figured I go for something basic to start off, the wife is a bit picky about trying anything new....
Here it is rolled in some herbs, garlic and black pepper


and here it is after two hours in the smoker with some oak smoke and a rack of ribs for company...


The ribs ended up on the smoker for about 6.5-7 hours (last three in foil) and the bones literally pulled right out of them (unfortunately they were so good they disappeared before I could take a picture!).
