sweet curried chicken
well i started to marinade a chicken yesterday ad cooked it today and i have to say it was incredible, so good infact i thought i would post it here.
Ive alllways liked to make curries so i thought i would try water smoking 1,
what i used
4 bay leaves
4 tbls of greek yogurt
2 tbls single cream
2 tbls fresh coriander
2.5 tbls tomato puree
2.5 tbls sweet mango chutney
1.5 tea spoons of garlic puree
2.5 tea spoons garam masala
1.5 tea spoons chilli powder
2 green chillis real finely chopped
half an onion chopped
2 tomatoes chopped
a pinch of fenugreek
a pinch of sea salt and black pepper
and about 1 good table spoon of olive oil
well basically i mixed it all together in a bowl, and then put a little in a container ( for brushing on the meat when its cooking ) with most of it rub it all over the chicken ad wrap in cling film and leave 24 hrs in fridge.
the next day i then water smoked it for about 2 hrs at 150 f and then took the water out rubbed on rest of the sauce and roasted it at 300ish until the sauce had a nice light brown to it.
then grabbed a beer and had some wonderful chicken.
if anyone tries it let me know what you think as i found it was fantastic
