Wrap a chicken fillet and beat it with a rolling pin to flatten it out.

Make a mixture from basil (fresh, finely chopped), olives and left over blue cheese.

Lay out the bacon.

Place the chicken fillet on top and paste with the mixture.

Pop the stuffed chilli on.


Roll the whole thing up and tie together.


Ready to go onto the smoker.

That looks outstanding! To be clear, the stuffing was basil, olives, and blue cheese, does the mixture used later have a few additional ingredients? Red and yellow peppers?

Mike, I chopped up the left over chillies (the tips) and added a bit of lemon zest to the mix... the final results were great and enjoyed by the people we had over for dinner.
On the Q

Hmmmmmmm tasty!




Also did a spatchcock chicken and some pork belly strips... finishing them on the Weber, you may note it was a bit chilly for us Africans, about 0
