Carribean style ribs
Howdy folks...
Its cold and rainy over here, and i needed something to warm me up inside.
So, i cooked up a rack of ribs in a jamaican style ( + a pork shank as dessert).
Here we go :
Rubbed the ribs with Dizzy Pig jamaican Firewalk seasoning and the shankwith texasbbqrub.

Put it on the WSM at ~220 F with some Hickory Wood (damnit, i ran out of allspice wood... ;-) )

Heres a pic after 2, 5 hours

Time to put some
-Pineapple juice
-EVO
-Jamaican Rum
-wholeHabanero
-jamaican firewalk rub
-allspice
-fresh lime juice
in the mixer to create a fantastic, hot, "glow in the dark" sauce

Then i basted the ribs with the sauce, covered with pineapple slices and basted again.

After about an hour the Ribs were done, extremely tasty with a good balance of flavours, pretty darn hot , juicy and tender.

Holy crap! That looks tasty.
( I am hoping to get some of that rub for Christmas)
I am pretty interested in this, do you have some approximate measures?

Re: Carribean style ribs
Ahhhhhhh DM, you never cease to amaze me with your culinary talent. What a great way to stay dry, sittin' at a table full of fine eats and a nice brown ale to wash 'em down.
I'm headed the dread 23 twisting miles from home to the market to buy a pork butt. Momma has the hongries for some jerk pork sandwiches, and who am I to argue with my bride of 35 years.
Be well, U.J.
