1/2 Pork Butt
Hi Guys & Gals,
Although I am certianly not up to the level of DM or Mike the Bowhter, my pork butt eats pretty gud!! Since it's only my wife and I for todays meal I had the butcher cut a 7 pound butt in half slicing the through the middle of the bone.
I made up a simple rub that my buddy's wife came up with:
3 Tbl Paprika
1 Tbl Garlic Powder
1 Tbl Dark Brown Sugar
1 Tbl Dry Mustard
3 Tbl Coarse Sea Salt
There was enough rub so that I was able to cover both parts of the butt. One half went into a freezer bag after being rubbed and was frozen for a later time. Before you get all excited . . . I have done this before and it works out great for taking along camping or tailgating before the football game. The rub really penetrates when it's frozen on the meat.
The other half stayed on the counter awaiting the fire.

3 1/2 hours later the internal temp was 185 degrees

So . . . I shredded it for eatin'

AND, stuck it on a deli roll and put it right along side of some fresh made cold slaw. And there you have a meal that my Daddy would have been proud to eat.
