How to make it..
HOT WATER CORNBREAD

1 c. white cornmeal
1 c. yellow cornmeal ( I perfer to only use the yellow)
1 tsp. salt

Mix thoroughly and pour in 2 cups of boiling water containing 2 tablespoons of shortening. * use your hands as a spoon just aint the way ot's done!* This produces a firm mound of dough. Set the dough aside and let it cool for a bit.

After the dough is cool, work in 1/2 teaspoon of baking powder dissolved in 2 tablespoons of hot water. Grab off a chunk of dough and pat into round cakes about the size of your palm. Fry the cakes immediately.

Fry in deep fat hot ( shortning) enough to bubble freely over the cornbread. This cornbread should have a crisp crust on the outside, yet be soft on the inside.

What a Face

If you want to go old school don't bother measuring, momma never did so just feel your way around.

Right as soon as I find some cornmeal I'm all over it! Cool

Hot water corn bread is sorta like hush puppies but thicker and heavier is the best way I can sum it up. The best part is seeing the finger marks in the bread!!

Eating them hot almost right out of the skillet is dangerous to say the least but the smell of them cooking just makes you do silly things. Grab em hot and drop some of that warm butter on them from the stick momma was going to use for pie is the best.

Man the butter running down your burning fingers with your mouth open trying to cool the burn as you run like Carl Lewis through the angry Gran-momma-auntie-big momma gauntlet in the kitchen yelling and "DAMMIT BOY" and swinging dish rags and wooden spoons at your head to safety in the back yard just makes the day that much more special.

I'm tellin ya guys make it and you wont be sorry. It's simple and basic food just like the BBQ we love that kept our grandparents bellies full.

I think we are a bunch or people that not only enjoy food but know that simple smells and procedures bring back memories of days gone by and family time that can never be replaced.

Now the author is too concerned with health IMO dealing with this but at least it comes with pictures to go by.

Stay away from using sugar as it wont need it!!! Fry it in good old plain Crisco or lard for those on this side of the pond.
Don't try and get fancy adding things, just keep it basic and you will be far happier with the results.

Salt = a must!
Sugar=NO

I love it Doc!

Purple Hull peas. I remeber sitting down with my grandma and "shucking" those bad boys for hours. The end result was something special though. Those peas, cornbread and baked macaroni/cheese...what an excellent memory. Smile

It's been a few years Doc. My folkes kind of went away from it. All I have is memories Sad

The last time I had it was at a friends, about 10 years ago. It will not make it to next week before I try this on my own though!

Jenx you hit it dead on! Black eye peas, rice, greens and hot water cornbread... the meal for kings! I'm not a fan of mac and cheese but it's time to recisit them I think. You know on the site I posted * www.americansoda.co.uk * the have some there and plenty of other things to bring back the good times. Cool

As usual let us know how they turn out, I'm off to see if I can find some corn meal.
