Fish Tacos
I had fish tacos at a restaurant once
, swore I would never again.
Well, once my wife started talking about it, sounded pretty good and worth another try.
Fried up some Talapia and placed on a tortilla shell (to me the crunchiness of the fried fish made it)

Added on some homemade pico di gallo consisting of red onions, tomatoes, avacado, jalepenos, and a little garlic.

Topped with cheese

and enjoyed with a home made bottle of Sauvignon Blanc

The thin Tilapia that can be folded right in your tortilla makes a nice choice of fish to use.

I Been eatin' fish tacos for a long time. Glad to hear you are on board. I like to mix a little heavier fish into the eats. Try adding a little smoked albacore or stripe bass to the Talapia.
My Pico de giao consists of 3 large tomatoes, half a sweet white onion, half a bunch of chopped cilantro (leaves only, NO stems
), 3 finely chopped serano peppers, and juice of one small fresh lemon. I add the avocado in slices on top with a dolip of sour cream, some shredded lettuce, and of course cheese.
Next time I make a batch I'll post some photos.

You don't know just how bad I miss those. Geat job! 
Last time I has home we had a Talapia and Catfish party and I got to spend some quality time with my dad preping fish and cooking.
