Hi all, I've been lurking on the forum for some time now so I thought I'd better sign up and make a few posts. I'm a bit of a newbie when it comes to smoking food but I've found the advice on this website to be really helpful. I've hot smoked ribs, chicken, Jerky and Gammon so far and cold smoked Salmon, cheese and Bacon, all have been a resounding success ( If I say so myself).... I recently purchased the "Cold Smoke Generator" for my cold smoking, I'll post a review of it soon. ...

Yep, another Yank here on the other side of the big pond. Been grilling for a few decades using various sizes of Weber grills from the WSJ to full-sized Weber LP grills with smoker boxes. Most of my smoking has been in an inexpensive charcoal-fired Brinkman. Even with modifications, the Brinkman was a pain to use (finicky heat control and definitely not versatile). Hence, I've been leaning more and more towards grilling and unfortunately, going out for real Q. I thought about purchasing a ...

Hi All

I been bbq and smoking (with a WSM) for a while now. I'm still a beginner though it has to be said!

I can do ribs, chicken beer can or spatchcock pretty well.

Trying out some new things fro me tomorrow, briskett, roast spuds in the smoker (in the rack under the brisket). Ribs, and pig some pig candy.

Things that i want to master:

1. pulled pork.

2. a decent homemade bbq sauce. All the recipies I tried so far are too thin , overpowering worcester sauce taste. ...

Hey ya'll. Just wanted to say hi to all, since I am the new guy.

I'm from Buckeye, Arizona USA and was blessed enough to receive an Excel 20 from Santa this year. I've only cooked on it twice, but absolutely love it.

Our team is VRM Pit Crew and we have been competing for the past few years w/ a few WSM's and a Traeger. The Excel 20 will definitely add a lot of firepower to our operation.

This site looks great. I cant wait to get deeper into it.

Cheers!

I'm a 45 year old married guy with an 11 year old son and a 14 year old daughter. I've been cooking for about 27+ years and I was a professional chef for about 10 years. I worked in some pretty nice restaurants but I got tired of the long hours and short pay. Now I just cook for the fun of it. I do consider myself an expert with many types of food but I'm certainly not a BBQ or smoker expert. I'm here to learn and contribute what I can.

Hi All,

Have been smoking for a couple of years now, got a Brinkmann Smoke & Grill from Pro BBQ (aka the ECB) and now hoping that I can graduate to a Pro BBQ Frontier (do you offer a trade in?? )

Got a few problems with the Brinkmann keeping temperatures constant, but am having another practise run this weekend with a rack of ribs, weather permitting.

As soon as I have the fire management and temps under control, I'll be picking everyones brains on different recipes.

CHEERS!

Hi,

I'm from Hamburg, Germany (I hope you can understand my poor English) and am quite new to smoking. After my first (frustrating) steps using a Barbecook smoker, I've decided to get a serious smoker. By lacking a bottom vent, the Barbecook didn't allow any temperature control. Therefore we never got to the right temp of about 225°F / 110°C and the PP ended in the kitchen-oven .

The trade-off between features/benefits and price led me to the ProQ Frontier. The Excel 20 is too large ...

Just joined and gonna snoop around a while before I start posting. I also just got a good deal on a Frontier...so I figgered I'd give it a whirl. I have had 2 offsets in my life, and 1 is still in the family but not in use for a little while for those of you that know me.

Do I season the new unit? I was thinking of doing it with peanut oil, like I did my 2 offsets. Good idea? Bad idea?

Hi there.

Well, I thought I'd better say hello first before delving into the rest of the forums. It's great to see the art of smoking is well and truely alive in the UK. I'va always loved BBQ's but hate the burnt offering, cheap cuts of meat (and lets not even mention the burgers), so I got into smoking mear instead. A recent redundancy has made me now turn that hobbie into (hopefully) a business and thankfully I've managed to get quite a few bookings for shows festivals etc. If there are ...

Hello all... just signed up as I found this site while doing a little research for my new rig. I ordered the E20 with an extra stacker and I absolutely cannot wait for it to arrive-- looks to be 2 more days. I have been using various other smokers for the past 20 years, but between the posts by Ian and Don Marco on another forum I frequent, I decided it was time to give one of these a go. The recipes look mighty tasty, the product looks great, and the company even better... cheers!

Hello Everyone!

I just got my new Frontier with the extra stacker last week. Fired it up for the Super Bowl and did a smallish brisket. I was impressed by how moist the meat was in my first smoke. Couldn't stop there though, I got up at 3:00 AM today to put on a much larger brisket (13lb). Going to add some beef ribs to that a little later on.

Anyway, enough about the food. I am really excited by these smokers. I had a Brinkman water smoker about 15 years ago and got really ...

Hi everyone,

If you're in Shropshire right now, is it foggy outside or is everyone taken up smokin!? He-he!

I own an Amigo smoker - used it once and the result was a bit dodgy...I totally feel like a sausage burner all right. I think I need to buy some other stuff to ensure I get a decent heat right from the start. Also opening the airhole at the top would help me to get the tempreture higher than 60 degrees, I'm sure!

Anyway hello smokers world wide, wherever you may be smokin' ...

Hi folks.

I've been barbequeing for many years, mostly on off-set smokers. In my old age, I finally decided that I could get just as good BBQ without having to tend the pit as often.

I know smoking with a Pro-Q is different than with my offset, so I look forward from learning from you pros how to use my new unit.

Thank you for letting me participate in this forum.

well guys, ive seen a lot of bbq posts and forums. Done my research, and honestly how could you want any other grill, or smoker than the excel 20. Im ordering mine soon, cant wait to give it a run. I've been a chef for 10 years, but in the past 2 have taken a liking to real low and slow bbq. Excel 20 is my one and only choice, almost made the mistake of preordering a new weber 22 wsm.

I just ordered an excel 20 from Freds today. I'm a die hard weber fan, own wsm, gold kettle, and 2 small charcoal grills. I just didn't want to wait any longer and the excel seems like an exciting addition to the market. I have several cooks to do in sept. so I'll try to contribute.

Hi all, I have been lurking on the forum for a while. Bought an Amigo earlier this year as an entry level to smoking and am now a convert from grilling. So far I have done a bone-in Rib of Beef, pulled pork(tasted great, but probably could have done with another hour or so), Moroccan leg of lamb, chicken and ribs.

I have had a few problems with getting upto and maintaining a constant temperature on the Amigo, but have been experimenting with a couple of the ideas suggested on here, and ...

Hi there.

I found the forum, whilst I was searching for the ProQ Homepage. I don't have a ProQ at the moment, but I am quite interested. At the moment I do own an Outdoorchef 57 cm Grill and a Son of Hibachi Grill. As a matter of fact it is just a decision between the fact that I could only use it at my parents home and the fact, that I could afford it at the moment. I just have to wait and see what happens.

Hello,

I have been lurking here for a while thinking about getting into smoking and am just about to take the plunge and am thinking about getting a Frontier.

However I have a couple of questions which I hope somebody can answer 1. do they now have the three air vents on the bottom? 2. I have seen a couple of photos of smokers on decking (which is all I have) but I am a bit concerned about the fire risk, do people have any suggestions as to what I could use to protect the deck whilst ...
