			<description>Did ya miss me guys? I been so up to my eyeballs in alligators I forgot to drain the swamp. Anyway, here's Prime Rib ala ProQ. I started out with a 4# chunk of prime cut by my local butcher shop:









First thing is to makle sure that the bone gets cut completely away from the meat and add a few cloves of garlic. I used elephant garlic this time around, but it turned out a little too mild for my taste, so I would recommend the regular stuff if you are a garlic lover.

			<description>Did a brisket last Friday.  Here are some photos.  I rub the brisket with a spice mixture I make myself that includes only Salt, black pepper, hot chili powder (HOT) and garlic powder.



I mop it with a mop sauce I make from apple juice, apple cider vinegar, hot pepper sauce, brown sugar, parsley, pepper and chili powder.  I change it from time to time.  It isn't really written down.



The brisket turned out awesome, you could cut it with a fork.  I also made my secret smoked baked beans.

Ricks Sinful Marinade



12 oz. can of beer

½ cup cider vinegar

½ cup of water

½ cup Worcestershire sauce

¼ cup olive oil

1 tablespoon beef base

2 tablespoons barbeque sauce

1 tablespoon seasoned salt or rub.

1 tablespoon celery seed

1 teaspoon cayenne pepper

1 teaspoon MSG

Yesterday i bought a couple of reduced single vac-packed argentinian Rib Eye steaks.

I couldnt resist cause they were really cheap, but they are only ~6-7 per piece.

Anyway, i guess everyone of you will confirm that the best side for a steak is... another steak.  







Putting two steaks next to each other on a plate seemed a little boring, so i seasoned the first one with EVO and cut up the other one for a skewer.

Im making some Beef jerky as im writing this.



Cut up some beef sirloin and marinated it for 36 hours in a mix of Worcestershiresauce, soy sauce, Tabasco, jack Daniels, Honey, Chipotle, Texasbbqrub, salt, pepper and hungarian Paprika.



















Dried it this morning and used an inverted rib rack to hang it on.











Meanwhile i prepared the WSM.

I cooked some cow yesterday on the WSM + ProBBQ WSM Stacker without the waterpan.

The meat was cooked direct high above the coals and the drippings fell into the fire like on a UDS. Delicious ! 



Here we go, i started off with an unusual but mighty tasty breakfast    :















Good enough to eat ;-) 







A couple of hours later i put a tri tip on.

I aged it in the vacuum bag i bought it in for about 8 weeks (4 weeks above the best before date)  ...</description>
