			<description>Inspired by Don Marco's cherry jalapino wings I came up with this version.



1 cup apple juice

1/2 cup jalapino pepper jelly

1/2 cup red raspberry jelly

salt

1/2 tsp hot chili powder

1 tsp black pepper 

dried parsley



I put a spice mixture of salt, pepper garlic powder and hot chile powder on the raw wings.

			<description>Had this on chicken the other night. I find most of the smoke flavour I get in chicken seems to come through the cavity rather than the skin anyway so in theory this should not have much effect on the smoke flavour in the flesh. Basically its a mix to stuff between the skin of the breast and the flesh:



Mix well:



cup of ricotta

handful of rocket roughly chopped

5 slices of serrano roughly chopped

a healthy dash of lemon juice

Wet rub



2 parts mustard 

2 parts dried onions 

2 parts paprika 

2 parts salt

1 part garlic powder 

1 part coriander

1 part cumin

1 part pepper 

1 part olive oil 







Hay mixture with beer and pineapple

Took some Rosemary, Thyme, Garlic, Shallot, Chives and mixed in butter for under the skin and rubbed on top as well. Then used Montreal Chicken Seasoning.

Your ingrediants will have to be based on how much turkey you are using.



1 1/2 lbs of turkey run through the grinder.

4-5 dill pickles finely chopped

5-6 green onions finely chopped

a handful of craisens 

half a handful of sunflower seeds

15-20 green olives quartered

1/4 cup brown mustard

a cup or two of mayonase cut with 2 tbs of vinegar for easier mixing.
